What a glass of juice made from fruit pulp really costs
The sum every juice bar and restaurant should do before setting a menu price.

Price per kilo does not tell you what you are selling costs. What matters is cost per glass, and for that you need to know how far the pulp goes.
The starting figure
A 500 g bag with 1 litre of water makes roughly 1.5 litres of juice. That is six 250 ml glasses.

Retail price before GST. Pulp only: excludes sugar, cup and labour.
What else to add
- Sugar or sweetener, if you use it.
- Cup, lid, straw and ice.
- Labour and the rest of your fixed costs.
Why it matters
A pulp that looks dearer per kilo can work out cheaper per glass if it goes further, or if you do not have to correct its flavour. Run the sum with your own recipe.
