How to store and thaw frozen fruit pulp
Temperatures, timings, and the mistakes that ruin flavour and texture.

Storage
- Frozen at −18 °C, our pulp keeps for 24 months.
- Store it at the back of the freezer, not in the door, where the temperature rises every time you open it.
- If you take a large order, rotate stock: first in, first out.
Thawing
- Best: overnight in the fridge.
- In a hurry: submerge the sealed bag in cold water.
- Avoid hot water and full-power microwaving: both change colour and texture.
- Shake the bag before opening. Natural pulp settles, and that is normal.
After thawing
Use it within 24 hours and keep it refrigerated. Do not refreeze: a second freeze breaks down the fruit's structure and the result is watery.
For businesses
Thaw only what you will use during the shift. If each preparation needs only a little, cut the frozen block with a sturdy knife and put the rest straight back in the freezer before it starts to thaw.
